| The variety of olive oil cultivated is called "Koronaiki" and has been growing in the region since the early Minoan Period (200 - 1500 B.C.). This variety of olive tree, is distinguished by the superb quality of its olive oil. The olives of this area are collected manually by the olive producers of the region (around 4,000), who are organised into 29 primary cooperatives, members of the Union, and they are processed on the same day at modern oil factories in the region. The extraction of the olive oil from the fruit is completely mechanised and takes place at temperatures lower than 30 °C, without any chemical prcesing. Thus the chemical and organoleptic characteristics are preserved unaltered, and its high biological valueis maintained. |

The Union packages and distributes on the international market metal containers of 5, 3, 1, and 1/2 litres and glass bottles of 1, 3/4, 1/2 and 1/4 litres of different designswith the label KOLYMVARI EXTRA VIRGIN OIL, ATHENA PREMIUM GREEK EXTRA VIRGIN OLIVE OIL, and PROTECTED DESIGNATION OF ORIGIN KOLYMVARI, and KYDONIA EXTRA VIRGIN OLIVE OIL. |
